According to some versions he did so, but most sources claims that Iphigenia was taken by Artemis to Tauris in Crimea to prepare others for sacrifice, and that the goddess left a deer or a goat (the god Pan transformed) in her place.
The episode of Iphigenia and Cymon that inspired painters as Benjamin West (1773), John Everett Millais (1848) and Frederic Leighton (1884) is not really a Greek myth, but a novella taken from Boccaccio's Decameron, developed later by the poet and dramatist John Dryden.
As Iphigenia sleeps in a grove by the sea, a noble but coarse and unlettered Cypriot youth, Cymon, seeing Iphigenia's beauty, fell in love with her and, by the power of love, became an educated and polished courtier.

 Classical E-Text: HYGINUS, FABULAE 3
The priestess there was Iphigenia, sister of Orestes, and when by tokens and questioning she found out who they were and why they had come, she herself, casting aside the vessels for sacrifice, started to remove the statue of Diana.
Iphigenia, seizing the opportunity, took the statue, embarked with Orestes and Pylades, and by a favouring breeze was borne to the island Zminthe to Chryses, priest of Apollo.
Later when Chryses was about to return Iphigenia and Orestes to Thoas, he [Chryses the Elder] learned that they were children of Agamemnon, and revealed to Chryses his [grand]son the truth – that they were brothers and that he was a son of Agamemnon.

Agamemnon (strongly played here by Jeff Elam) has sent for Iphigenia, using the ruse that she is to be married to Achilles (also Elam).
Then when Iphigenia arrives, she's got her mother unexpectedly in tow, making it a lot harder for Agamemnon to sacrifice his daughter in peace and quiet.
Iphigenia has found a way to fight for Greece, and her death will probably be a lot swifter and more merciful than the other sacrifices to come (ten years later, only a few ships of the massive armada will limp home), but her choice is still troubling.

A great deal happens in this play, and what happens is both profoundly significant for all of us and deeply moving as well.
Iphigenia in Tauris, which Thomas Mass termed supreme among the works of German literature, is a subtle psychological document by a poet whose language and nationality were German but whose mentality was at the very least European.
Even that term suggests a false limitation, for in actuality, Goethe's mind was concerned with the universally human.
