The Shinkansen (新幹線) is a network of high speed rail lines in Japan, upon which the famous "Bullet Trains" run.
The name Shinkansen literally means "New Trunk Line", and thus should technically refer to the lines and not the trains, which are officially referred to as "Super Expresses".
The prefix 'shin' means 'new' in Japanese and oftentimes when building the Shinkansen network, it was not feasible to build it to the already existing station, therefore a second station was built with the 'shin prefix'.

The Sanyo Shinkansen was opened as far as Okayama in March 1972, and the entire 554 km from Shin-Osaka to Hakata (Fukuoka) was opened in January 1975 with the completion of the 18.7 km Shin-Kanmon Tunnel linking Honshu (Japan's main island) to Kyushu.
While originally dominated by 0 series units and later by 16-car 100 series units, the Tokaido services are now operated entirely by 16-car 300 series units, except for a handful of rush-hour services for commuters, which use 700 series units.

The 200 Series Shinkansen trainsets were built for the second generation of Shinkansen dedicated high-speed rail lines in Japan, the Tohuku Shinkansen and Joetsu Shinkansen.
They actually predate the 100 Series Shinkansen, having been built between 1980 and 1986.
They resemble the earlier 0 Series Shinkansen in styling (some later units have the pointed 'shark nose' of the 100 Series), but are lighter and more powerful, since these two lines are mountain routes and have steeper gradess.

I only rode on the Shinkansen 300 and 700 "Hikari Rail Star" series because when I went this summer and used Japan Rail Pass, they don't allow you to board the Nozomi service, which uses mostly 500 series.
For the Tokaido, Sanyo lines, they seem to use the older 300 series a lot for Hikari service whereas for the JR East Shinkansen lines, they use much newer trains.
