While I'm still expecting the 6800 to show me how much I was not, in fact, CPU limited, I'm working on assembling a new test system to really open up the throttle on these cards.
Without HQ settings the 6800 is definitely faster (though only by a little bit in Facing Worlds 3), but turn them on and we see a much different story.

The 6800 series from Nvidia so far seems to be designed and organised much better than their GeforceFX series when concerning the Ultra and GT.
As you can see, all chips are quite similar in features, the 6800 non ultra is a lot slower than both the GT and Ultra clock wise, and also comes equipped with 4 less pipelines and, by default, 128MB less RAM.
The gap between the 6800 and 6800GT is significant when it comes to memory bandwidth (which is usually the biggest performance factor), perhaps in the future we will see another revision of the 6800 to fill this gap (6800XT?) - both Nvidia and ATi seem to like releasing a chip where ever possible.

The truth is that the GeForce 6800 GS is not a major new GPU revision in any sense of the word, though, and that the 6800 GT that it ostensibly replaces was most definitely in need of replacement.
The 6800 GS doesn't quite match up with the 6800 GT in terms of pixel fill rate, but that number isn't terribly important in today's games, which require increasing amounts of shading and texturing power per pixel.
The 6800 GT is based on the original NV40 chip, and it needs the help of a separate bridge chip in order to talk over a PCI Express interface.

One review that does have some (PC) 6800 Ultra vs ATI X800 (XT/Platinum models) tests is this article at Anandtech, which in the limited tests run there shows similar performance in Halo and Aquamark.
PC 6800 Ultra cards are currently priced similar to the Mac 6800 Ultra however, but the Mac model only works/fits in a PowerMac G5.
