A good companion book to Thiede's work is Graham Stanton's _Gospel Truth_, in which Stanton examines Thiede's claims --both with respect to 7Q5 as well as the Magdelan fragment-- and offers overwhelming evidence as to why neither identification can be correct.
A couple of notes: The identification of 7Q5 (a papyrus fragment containing some 13 or 14 Greek letters) as containing a portion of Mark 6:52-53 was orginally put forward by Jose O'Callaghan in 1974; Thiede is simply one of the most vocal defenders of the conjecture.
These other identifications are typically viewed as even less likely than that proposed for 7Q5.

One of the strongest critiques of O'Callaghan's identification of 7Q5 as from the Gospel of Mark came from the late Colin J. Hemer, an Anglican expert in exegesis and archaeology.
Hemer some years ago published an article in the German scholarly journal Zeitschrift fur die neuetestamentliche Wissenschaft in which he argued that 7Q5 could contain a passage written by Thucydides (a Greek historian who lived in Athens in the period from 460 to 400 B.C.).
He then proceeded to show how the 7Q5 fragment could be read as a text from Thucydides.

Regarding 7Q5, if Thiede claims that "he has assigned it to GMark," he is appropriating the work of someone else without attribution.
In addition to Puech's work cited above, on both of Thiede's claims, articles are said to be underway from Peter J. Parsons and TC Skeat, each of whom is a major figure in papyrology.
Scholarly assessment of Thiede's work on P. Magdalen 17, but not on 7Q5 so far as I know, is available on the World Wide Web.
