My favourite adobo would be pork, boney chicken, baby squids, snake beans and kangkong but i like all variations of adobo.
Beef bistek or fried beef adobo is another favourite not forgetting pork chops bistek [Ian's mum likes this one] but more of these later as i will try and post all the adobo mentioned here.

A while back I tried my hand at making Pork Adobo, the Filipino dish where pork is cooked in water, soy sauce, vinegar, garlic, and bay leaves, then browned.
I was going to make it again sometime, but then I happened to catch a post on Pinoy Cook about her experience trying Mark Bittman's Chicken Adobo recipe from his great new cookbook, The Best Recipes in the World.
I guess this is my version of Adobo chicken, with recommendations from many cooks along the way to this recipe.

Speaking of white folks who cook adobo, Mark Bittman (yeah, that Mark Bittman) writes something to the effect that chicken adobo is the best chicken dish in the world -- can't find the exact quote, but it's in his excellent How to Cook Everything.
My mother makes a fine pot of chicken&pork adobo, but she uses no recipe and even when she tells me what to do, mine always turns out wrong.
Instead of sugar, add about 5-10 whole cloves in the adobo, (and of course the soy sauce, vinegar, bay leaves, peppercorns, garlic and chicken or pork, with a little water).
