Ailerons: The two ailerons, one at the outer trailing edge of each wing, are movable surfaces that control movement about the longitudinal axis.
Thus, the effect of moving either aileron is aided by the simultaneous and opposite movement of the aileron on the other wing.
Rudder and aileron trim tabs operate on the same principle as the elevator trim tab to relieve pressure on the rudder pedals and sideward pressure on the control wheel, respectively.

The problem is that to raise a wing the aileron increases lift on that wing with the resultant increase in drag.
In other planes the aileron is hinged towards the top of the wing/aileron joint so that a portion of the leading edge of the aileron sticks down into the slipstream creating drag when the wing is descending to balance the resultant drag from the rising wing.
With the aileron horn on top and the cable attachment to the hems a little forward of the hinge point there is more up movement than down on each aileron.

Aileron differential still works correctly when inverted, remember you're effectively flying a model with anhedral (which responds in the opposite direction to yaw) when upside down.
The aileron that lifts the wing (down aileron) also increases that wings drag, the aileron that lowers the opposite wing decreases that wings drag.

The differential is setup so that both ailerons go up a greater amount than they go down so that when in a turn the "up" aileron creates more drag than the "down" aileron.
Lowering the flaps (or aileron) RAISES the angle of attack of the wing.
If the fuselage doesn't change it's angle into the wind when the aileron goes down, then the wing with the lowered aileron (or flap) has a higher angle of attack and the wing with a raised aileron has a lower angle of attack than they did when the ailerons were centered.

I had the travel adjust set for 125% for both directions of the aileron (you can go as high as 150%.) I like the 125% because it gives a better mech advantage when the ail is hard over when there is the highest load in 3D flying.
The 150% spektrum aileron travel setting works great for a one servo application, but this is not applicable to the 2 servo setup due to the non-linearity that results.
I would assume, that if the radio was working properly then adjusting the aileron end points with the flaperon function enabled should adjust the travel of both aileron servos, but it doesn't, only the right one.

In addition to flaperons, there's another common reason to use two aileron servos/channels - aileron differential: basically, the downward movement of ailerons is reduced, which helps lower the induced drag associated with a lot of aileron.
Aileron differential can be very effective on high performance planes where precision is necessary, as well as on slow flying planes where induced drag effects are exagerated.
There are other, clever ways to set up aileron differential, but the vast majority of times it's done with two servos and a computer radio.
