  Vive La Vie
Chosen by the Roux Brothers in 1967 as the name of their first and most famous restaurant Le Gavroche, still stands as the symbol of their success, the gamin's bedraggled wide eyed state contraindicating the promise of excellent cuisine and unparalleled service that marks each of Les Roux's hugely successful ventures.
Roux developed his talents in a unique ambience, preparing a small omelette and a bouillon des legumes if the mistress was supping alone; or working at a frantic pace when a host of guests was invited for a sumptuous grand banquet.
Perfecting his cuisine for the aristocracy in the most idyllic of surroundings, Albert Roux established his reputation as a master Chef and when the doors of Le Gavroche opened, it was not so much a restaurant as a private club for Barons and Earls.

 EpicurusConsulting.com: Albert Roux
Albert Roux is perhaps the best known chef in Britain, a household name as the proprietor of the United Kingdom's top restaurant and through his successful cookery books and television programmes, a face widely recognised by all those interested in food.
Many titles and awards have been bestowed on Albert Roux since he started his career at the early age of 14, but perhaps the one closest to his heart is that of Maître Cuisinier de France, awarded in 1967 - the youngest chef to have been so feted.
However, though Albert's reputation as a chef and restaurateur is recognised by all, his wider involvement in the hospitality industry and in particular, his involvement in the elegant and luxurious all suite establishment adjoining Le Gavroche, that he created with his wife Monique in 1982 - FortySeven Park Street - is not so well known.

Albert Roux - how Le Gavroche was born - JancisRobinson.com
Whether either government would have made such awards had they known of Roux’s criminal past is now only a matter of conjecture but he was more than happy to confess to them when we met a couple of days before the ceremony at Brasserie Roux on Pall Mall.
If Albert was not surprised that one day he would part company with his brother, he was very surprised that his son wanted to join him.
Albert’s biggest concern when he walked out was not for the restaurant’s culinary standards but how his son would get on with Giraldin who, having joined Le Gavroche as the most junior waiter in 1971, was now running the restaurant.
