Defence is any measure that protects you from harm when you are talking about something not directly related to that one game mechanic.
"Defence" is a form of defence, "Resistance" is a form of defence, "Deflection" is a form of defence, "Perception" (evasion rating) is a form of defence, etc.
As such, using all of these in conjunction gives you an "all round defence", where "Defence" only covers one of many areas and is not very "all round" at all.
