AMMONIUM SALTS BIOCHEMICAL ASPECTS The principal source of ammonia in the body is the oxidation of glutamate by glutamate dehydrogenase, which is present in liver and other tissues.
The levels of ammonium carbonate and bicarbonate in the diet from food additive use are extremely small compared to the levels required to cause physiological changes and pose no toxicological hazard.

The use of calcium carbonate to neutralize the acids present in a sponge and to leaven the fermented dough is not disclosed Furthermore, calcium carbonate is not sufficiently soluble in water to uniformly neutralize the acids in a sponge or to leaven a sponge dough substantially uniformly.
To ensure uniform distribution of the potassium carbonate throughout the dough, the flour added in the dough-up stage is desirably distributed substantially uniformly over the surface of the mixture formed in the creaming stage and the potassium carbonate is thereafter distributed uniformly over the surface of the flour.

Ammonium carbonate - Wikipedia, the free encyclopedia
It possesses a strong ammoniacal smell, and on digestion with alcohol the carbamate is dissolved and a residue of ammonium bicarbonate is left; a similar decomposition taking place when the sesquicarbonate is exposed to air.
Ammonia gas passed into a strong aqueous solution of the sesquicarbonate converts it into normal ammonium carbonate, (NH, which can be obtained in the crystalline condition from a solution prepared at about 30 °C. This compound on exposure to air gives off ammonia and passes back to ammonium bicarbonate.
Ammonium carbonate is used when crushed as a smelling salt.

Molecule of the Day : Ammonium carbonate (Stinky leavening)
Ammonium carbonate is analogous to the other bicarbonate and carbonate salts you see - baking soda.
The strange thing about the smell of ammonia is that on its own it is quite pleasant in small doses (at least in my opinion) but when it is combined with anything else it smells foul.
For instance if you are precipitating protein from fish guts with ammonium sulfate it smells horribly rancid even though the fish is fresh and not bad smelling when you begin.

It is also called bakers' ammonia (ammonium carbonate).
It is an ammonia compound and not harmful after baking.
Once the word meant literally the ground horn of a hart's (male deer's) antlers, but ammonium carbonate was later used as a substitute, which also went by the name of "salt of hartshorn." This is still available in American pharmacies and used occasionally in making cookies."
