SingaporeMoms - Parenting Encyclopedia - Animal fat
In human nutrition—as far as regions where heart disease is a more common cause of death than starvation are concerned—animal fats are generally considered unhealthy due to their association with high cholesterol levels in the blood.
Animal fat contains some cholesterol, but saturated fat (a large component of animal fat) stimulates cholesterol production in humans and so animal fat contributes in two ways to cholestrol levels.
While elevated blood cholesterol levels have been linked to heart disease, it should be noted that there is no necessary relationship between cholesterol intake and blood cholesterol level.

► Fish Oil Facts - Learn the Truth
In layman’s terms, fish oil is the substance that is derived from the tissues of oily fish.
In the Mayo Clinic’s February 2004 newsletter, doctors have encouraged a higher intake of omega-3 fat, found in fatty cold water fish, canola oil, flaxseed, soybeans, tofu, walnuts and fish oil capsules - this particular type of fat may help boost good cholesterol levels and lower triglycerides (blood fat).
The same link was discovered in subsequent studies done in 1983 to 1989 in 36 other countries where a diet rich in animal fat provoked higher levels of MS.
