This recipe was suggested by listener Anna Dibble, who writes, "I lived in North Carolina for a while and ate a lot of new stuff.
In a pressure cooker, combine the rice and 2 tablespoons of the olive oil with 4 cups of water and a few pinches of salt, Bring the pressure up to high, then reduce the heat to keep the pressure steady.
If the rice is still too moist and chewy, heat it over a low flame for a few minutes of additional cooking time.

This untraditional recipe for a traditional Indonesian dish comes from Anna Dibble, who gave us Anna's Rice and Beans (now in the What's for Dinner recipe archive).
Nasi goreng is typically made in a wok, but Anna advises me that a large frying pan will also do.
* Anna recommends also adding the zest of the lime to the coconut sauce, which is easily done if (as Anna and I do) you have a Microplane grater.
