The motif was adopted in the early Christian churches; in these the apse occupied the eastern end of the building where the altar, the bishop's throne, and the seats of the clergy were placed.
Because of its location and function in the church services, the apse became the architectural climax of the church interior and was richly ornamented.
In English Gothic architecture the apse was in most cases a square termination, and in Italy its form remained a simple semicircle, as the chapels were in another part of the church.

Apse - Wikipedia, the free encyclopedia   (Site not responding. Last check: 2007-10-21)
An exedra or apse may be reduced in scale to form a niche within the thickness of walling; a niche does not reveal its presence by projecting on the exterior.
The interior of the apse is traditionally a focus of iconography, bearing the richest concentration of mosaics, or painting and sculpture, towards which all other decoration may tend.
In the beginning of the 13th century in France, the apses were built as radiating chapels outside the choir aisle, henceforth known as the chevet (French, "headpiece"), when the resulting structure was too complicated to be merely an "apse." Famous northern French examples of chevets are in the Gothic cathedrals of Amiens, Beauvais and Reims.

The apse appeared early in Roman temples and basilicas; it was originally a semicircular recess with a half dome as ceiling and contained the monumental statue of the deity.
As the apse steadily increased in liturgical and architectural emphasis, chapels were added to it.
In France the entire choir—composed of apse, ambulatory, and radiating chapels (the whole termed a chevet)—attained, in the 12th and 13th cent., its great splendor.

 CATHOLIC ENCYCLOPEDIA: Apse
The apse in the chapel of St. Quinide, probably of the ninth or tenth century, is the most singular as well as the most ancient part of the church, and is formed in a manner of which no other example seems to be known.
In the Byzantine style the apse was retained, as in St. Sophia at Constantinople, in the old Byzantine churches at Ravenna, and in several churches on the Rhine.
The traditional semicircular apse, greatly enlarged and, in the perfected style, changed to a polygonal plan, is the most characteristic eastern termination of the larger French churches.

 Choir and Apse
The choir and apse of St. Julien are beautiful examples of Early Gothic architecture, and were built in the late 12th and early 13th centuries, around the same time as the choir of Notre Dame, with which it is often compared.
The semicircular apse of St. Julien is covered with a quadripartite vault supported by the second set of compound piers and by two clusters of tall detached colonnettes set against the curved eastern wall between the windows.
This is the northern elevation of the choir seen from the Chapelle du Saint Sacrement on the south aisle.
