  Batavia Arrack
The spirit called “arrack” is a difficult spirit to locate in some regions, but for a cocktail enthusiast it is a very important ingredient to acquire.
Genuine arrack is made from palm sap and is closer in flavour to rum.
Arrack and Batavia arrack are claimed to be distinctly different distillates, the former palm flower distillate, the latter sugarcane distillate yeasted with red rice.

Arrack was imported from Java, Indonesia, where it was distilled by Chinese immigrants, who have kept the exact production process and ingredients a secret, all the way from the 18th century to our days.
Punsch in the old days was made by mixing arrack with sugar, lemon and hot water  —  similar to the punches drunk in France, England and Germany.
