A Single Malt Scotch Whisky is the product of one specific distillery and has not been mixed with whisky from any other distilleries.
The greatest concentration of malt whisky distilleries can be found in the Speyside region of north-east Scotland, with Highland, Lowland and Islay being the other main malt whisky producing zones.
Each of these regions has its own particular distinctive style of malt whisky and although it is not possible for two malts to be identical, even if the distilleries that produce them happen to stand side by side, it is usually possible to distinguish in which region of Scotland a particular whisky was made.

Before the tax on malt in 1725, when illicit distilling became common, farming clachans on the island had made their own pot-still whisky with a rustic method which was used throughout the Highlands.
It was this illegal Arran whisky which the islanders carried in barrels down to the shore and loaded into boats, to be ferried across to the mainland to use as barter for other necessities.
The new Isle of Arran distillery commemorates the death of illicit whisky distiller, Lachie, in a huge mural which covers an entire wall in the £1m visitor centre.

The nose is close to malted barley and the fragrances are issued from the distillation (spices) with however slight chocolate hints, coming from the ageing in sherry casks.
It is however not yet in state to compete with the great single malts, but the production of this interesting distillery must be kept in mind in the coming years, as it could bring us some very nice bottlings....
In the palate, a kind of complexity, where malt and fruity hints share are both "papilla catchers" at first, and then it developes on slightly acid notes, between metal and wood, and at last, nice bitter touches (nut), when the alcohol impression begins to appear.

Few Lowland malts age well beyond their teens as the lightness of the whisky tends to be overpowered by the oak and cedar notes that emerge from the cask.
Lowland malts tend to have a distinctive lightness and oftentimes a "toasted marshmallow" quality, and Highland malts tend to be recognized for their fruity, flowery, or sherry characteristics.
I'll probably have a taste of these and several other whiskies, but I wanted to choose a single malt that was readily accessible, affordable (at least not outrageously expensive), and one that signified the best of what is happening in the world of whisky at the end of the century.

Oh, I should perhaps mention that the single cask is not the same as the single cask calvados finished - it would be illegal and classified as a narcotic substance due to strength over 60 %.
Arran is way beyond me. I have not tried all the thousend bottlings of all the barrel types that are possible nor all the barrel types they have done.
Glengoyne is a lowland malt from the highlands and Highland Park is a highland whisky from an island.
