It is a study of the "principal doctrines" of The Church of Jesus Christ of Latter-day Saints, based on the 13 Articles of Faith written by church founder, Joseph Smith.
According to James E. Harris, author of the excellent "The Essential James E. Talmage," as well as the foreword to a smaller edition of "The Articles of Faith" that was published by Signature Books earlier this year, the class was probably intended as a sounding board for Elder Talmage's approach to the book.
In 1891, Elder Talmage met with the First Presidency to discuss the writing and publication of a book on theology, for use in church schools and religion classes.

Several Latter Day Saint religions make it clear in (even in their various parallels to the Articles of Faith) that "Mormon" is not a proper term for their adherents or their church.
As far as i have been able to tell, "Mormon" is only applicable to The Church of Jesus Christ of Latter-day Saints (Salt Lake City UT) and the Church of Jesus Christ of Latter Day Saints (Voree WI), although "Great Lakes Mormon" is more specific for the latter.
BTW if general population think them as Mormon, doesn't really matter what they prefer.Just like Joseph didn't like to be called Joe, but most of the Gentiles used it.
