Astacus, Astacus astacus (Linnaeus, 1758) / Astacus fluviatilis (Fabricius, 1775) / Astacus leptodactylus (Eschscholtz, 1823), is a genus of crayfish.
Due to the American crayfish plague, crayfish of this genus have been almost wiped out in Europe and have in many European countries been replaced by the North American Signal crayfish, which is resistant to the plague.
In Europe, and in particular in Scandinavia, Astacus is often considered to be the original and finer, thus more expensive, crayfish.

Astacus astacus, the European crayfish, noble crayfish or broad-fingered crayfish, is the commonest of Europe's species of crayfish (Note: it is also commonly referred to as Astacus fluviatilis; this is the same species).
It is found from France throughout central Europe, to the Balkan peninsula, and north as far as parts of the British Isles, Scandinavia, and western parts of the former Soviet Union.
