Eu was called to the Bar in Hong Kong in 1978 and was appointed as a Queen's Counsel (Senior Counsel after 1997) in 1993.
Before her entrance into politics, Eu was the chairwoman of the Hong Kong Bar Association.
Eu ran for the 2004 LegCo election for the Hong Kong Island constituency in the same ballot as Cyd Ho from The Frontier.

Article 45 Concern Group lawmaker Audrey Eu, who with 30 other members of the Hong Kong Bar Association attended a dinner meeting with National People's Congress deputy secretary-general Qiao Xiaoyang on Thursday night, later told reporters that she explained to Qiao the desire of Hong Kong people for the introduction of universal suffrage in 2007/08.
Describing the session as ``completely honest and sincere'', she stressed to Qiao that neither pro-democrat lawmaker Fernando Cheung, who raised the referendum proposal, nor the pro-democrat camp were seeking independence for Hong Kong.
Eu said Qiao responded that the NPC Standing Committee had already made its decision on April 26 to rule out the possibility of universal suffrage for 2007 and 2008 elections.
