I discovered that there was more to Auntie Em's story than the movie revealed.
Known to generations as “Auntie Em” in the 1939 film classic The Wizard of Oz, Clara Blandick was often cast as an aunt, having played “Aunt Mattie” in A Star Is Born, and “Aunt Polly” in Tom Sawyer, and Huckleberry Finn.

Aunt Ruth's last name is Elms (just like Betty's last name).
I thought about Betty's last name being close to "Em" too, but in my opinion I don't think it holds significance, primarily due to Lynch's love of trees.
Lynch's father was a research scientist who worked for the Forest Service and David spent a lot of time alone as a child in the forest.
