Stefansson has been a leader in development of rapeseed from an unadapted crop producing modest amounts of industrial oil to an adapted food and feed crop (CANOLA) rivalling wheat in acreage and value.
Baldur Stefansson and R.K. Downey first identified the first low erucic plants in rape, which led to the development of canola (Corel Professional Photos).

Baldur Stefansson made a major contribution to Canada, Canadians, and people around the world through his outstanding work in developing canola.
Baldur, often referred to as the "father of canola", was born at Vestfold, Manitoba, to Gudmundur and Jonina Stefansson, a pioneer Icelandic family.
However, rapeseed oil, with its high level of erucic acid, was a threat to human health, and rapeseed meal, because of its high level of glucosinolates, was unsuitable as feed for livestock.
