Banitsa (Bulgarian: баница ['ba.ni.ʦə], also transliterated as banica and banitza) is a traditional Bulgarian pastry prepared by layering a mixture of whisked eggs and pieces of sirene (white cheese) between filo pastry and then baking it in an oven.
Banitsa with milk is made by baking the leaves soaked in milk with sugar and vanillin.
In Bulgaria, banitsa is a symbol of Bulgarian cuisine and traditions.

Don't open packs until your stuffing for banitsa is ready (otherwise the pastries will dry out).
Meanwhile take a round baking pan (it is a Bulgarian tradition to make banitsa round, brush it evenly with a very little oil/butter.
By the way, no-meat banitsa is a must meal for the Bulgarian X-mas Eve...

Banitsa is wonderful; sort of a cross between a soufle and a bread.
Sonja, shown at the stove, made it in Kovachevitsa and Margarita made it in Veliko Turnovo.
It usually peaks when the local supply peaks and tourists bring in foreign exchange which can be used to import food during the lean months.
