Baozi are steamed buns with some sort of filling, usually ground pork but sometimes you get unlucky and it's sour roots.
I have a usual baozi place where the woman knows which kind I like so I just have to smile and hand her money.
I'm used to baozi that are about the size of a racquetball (those are the blue ones right?).

It is easy to find baozi on the street in the morning - many vendors and small restaurants sell them - but it is harder to find them during the evening and afternoon.

Tianjin is known particularly for the baozi, and Gou-Bu-Li in Vancouver has the best within a few hundred miles of Seattle.
The standard filling for jiaozi and baozi is just ground pork with some chives, ginger, and maybe some egg.

I much prefer the baozi's warm savory insides, perfectly contrasted to the squishy softness of the outside bun.
I bought the four in this photo from a street vendor, whose giant 2-foot wide bamboo steamers bursting with baozi are conveniently situated on the road to my school.

I witnessed a bit of an altercation this morning involving a slightly senile old man, his wife, his son, and the owners of a small jiaozi &; baozi canteen.
“You’re embarrasing the laowai”, “Laowai wanted baozi but you’ve ordered them all, of course you should pay for them”, etc… The matter was very quickly settled and I left the restaurant as quickly as I could as it was too early in the morning to deal with all the spectators.
the jiaozi are the steamed or fried dumplings and the baozi are the stuffed buns.

BaoZi on the other hand is more like a giant dumpling - in the sense that it has a skin and has filling.

In Shandong and Northern China, BaoZi is meant to be a meal by itself, as well as ManTou.
I guess the only thing similar to it I can think of is the BBQ Buns that some of you may have tasted at the Dim Sum places.
However, the filling to skin ratio of BaoZi is more similar to XLTB than BBQ Buns.

You could buy baozi to go--you had to, in fact, since they were usually sold at street stalls from big steamers over pots of boiling water--and you could buy just one of them if you wanted to.
We didn't do it, and I have yet to eat a baozi in America that comes even close to the ones we could get in Nanjing, a city that wasn't even known for its baozi.

You could hear the bustling city on the other side of a brick wall, but all was peaceful in the garden, the eggs were wonderful and the buns were warm and juicy.
