Barbacoa - Wikipedia, the free encyclopedia
Barbacoa de cabeza is a specialty of slow cooked cow head that arose in the ranching lands of northern Mexico after the Spanish conquest.
In the U.S., barbacoa is often prepared with parts from the head of a cow, such as the cheeks.
Barbacoa was adopted into the cuisine of the United States by way of Texas which had formerly been a part of northern Mexico, and the word transformed in time to "barbecue", together with many other words related to ranching and cowboy (vaquero) life.

BARBACOA AKA the Eminem of barbecue: excellent flavors, but folks might question its authenticity.
Barbecue and Queen Anne Avenue don't exactly share the same cultural roots, and plenty of barbecue purists would reject (and resent) the notion of "upscale barbecue"; they'd insist that when it comes to pork 'n' beef cooked low 'n' slow--faithful to tradition and regional standards--"upscale" would mean wrong.
Barbacoa continues to buck tradition when it comes to desserts, and with charming results.
