The beluga (Huso huso) is a species of anadromous fish in the sturgeon family (Acipenseridae) of order Acipenseriformes.
Heavily fished for the female's valuable roe—known as beluga caviar—the beluga is a large (maximum 6 meters/19 feet), slow-growing and late-maturing fish that can live for 150 years.
It is clearly unrelated to the beluga whale and is in fact a sturgeon.

The beluga's neck is narrower than the necks of other whales, and it also differs from most whales — whose neck vertebrae are fused — in that its 7 neck vertebrae are free, which allows it to nod and turn its head.
The beluga's diet is varied, and consists of small squid, crabs, clams, shrimp, sandworms, and various kinds of fish such as capelin, sandlance, and polar and arctic cod.
It is especially fond of young salmon, and groups of belugas sometimes gather at the mouths of rivers to feed on the salmon as they return from their fresh water spawning grounds to the sea.

In the early 1900s, both Canada and the United States were major suppliers of caviar to Europe, harvesting the eggs from lake sturgeon in the midwest, and from Shortnose sturgeon and Atlantic sturgeon that spawned in East Coast rivers.
The United States Fish and Wildlife Service banned the import of Beluga caviar from the Caspian Sea in September 2005 in an attempt to protect the endangered Beluga sturgeon.
