Beta Persei (Algol) is a notable EA type eclipsing binary, changing from 2.12 to 3.39 every 2.8673 days (2d, 20h 48m 56s) as the companion eclipses the primary.
The most famous are beta Persei (Algol), which varies from 3.4 to 2.1 over 2.87 days, and gamma Persei, which varies by three magnitudes over 14 years.
The most spectacular of these "variable stars" is "Beta Persei", also known as "Algol", which dims perceptibly for a short time on a very regular schedule of 69 hours.

Delta Persei, at an even 3.00 magnitude, is one of the many blue giant stars in the Perseus pattern, on the opposite (southeast) side of Mirfak from yellow Gamma.
Epsilon Persei is a magnitude 2.88 superhot star, also about 530 light years away and similar to Delta in many respects, although at spectral type B0 Epsilon is defintely hotter and therefore bluer than Delta's B5.
Rho Persei is one of the few red stars you'll notice in Perseus; this ruddy giant star is magnitude 3.3, and is located just about 2 degrees south of Algol, making for a fine color contrast pair in binoculars.

On each occasion, when the fainter secondary component passes in front of the brighter primary, the star takes a few hours to dim from magnitude 2.1 to 3.4 (easily detectable by the naked eye), and a few more to return to normal.
