The snack is available all across India, and may be known by different names - Bhelpuri in Mumbai, Jhaal Muri in Kolkata.
Bhel puri is a mixture of puffed rice with two different "chutneys" (Hindi for sauce) - one spicy chutney made of green chilli and the other sweet chutney made of dates.

The origins of bhelpuri are now the subject of some dispute but legend has it that the dish was invented not on Chowpatty beach but at a restaurant called Vithal, near the Victoria Terminus railway station.
The tang in the bhelpuri-the onion, the garlic in the chutney and the sweet-sour khajur-imli tastes-has nothing to do with the pious Sharmas and their time-honoured techniques of crumbling deep-fried foods (samosas, kachoris, tikkis and God alone knows what else) on a patta before adding dahi and chaat masala.
But bhelpuri is all about texture: soft but firm boiled potatoes, crunchy sev, crispy puffed rice and small pieces of onion that squish as you bite into them.
