The word "bibimbap" literally means "mixed rice " or "mixed meal." Bibimbap is rice topped with vegetables, beef, and egg, and mixed with gochujang ( chile pepper paste).
A variation of this dish, "dolsot bibimbap" (돌솥 비빔밥, "dolsot" meaning "stone pot") is served in a heated stone bowl, in which a raw egg is cooked against the sides of the bowl.
Before the rice is placed in the bowl, the bottom of the bowl is coated with sesame oil ; consequently, the portion of the rice touching the bowl becomes golden brown and crispy.

There are innumberable varities of bibimbap but the most popular are perhaps those that use a dolsot or stone bowl which is heated on the burner until a few grains of rice dropped into it crackle.
For the most part, bibimbap is considered to be a homestyle Korean dish, and is usually made with leftover banchans and kimchees of various types.
For ground beef use is it in bibimbap, or try wrapping it in lettuce leaves with either rice or julienned veggies such as cucmber or daikon, don't forget to add a dollop of kojuchang to the leaf as well.

The Tolsot is the stonkin' hot stone bowl into which the mixed rice and vegetable dish - the Bibimbap - is cooked and served in.
I generally throw the kimchi into the tolsot along with a healthy dollop of the hot red pepper paste called kochujang and plough the lot up together.
A 'real' Chonju Bibimbap should have 30 or so ingredients and you won't find even half of that little lot anywhere outside Chollabuk-do province and certainly not here in Saigon.

I had bibimbap for the first time (I know, blasphemously late) in Japan of all places.
I've searched for bibimbap recipes on the net and they say to use a "seasoned red pepper paste", some combination of this gochujang, sugar, sesame oil.
At home I serve my bibimbap with kochujang straight from the tub and I have seen it this way in Japanese restaurants as well.

My bibimbap came in a huge bowl, along with a metallic bowl of rice rice, two kinds of kimchee and a small bowl of soup- a lot of food for $7!
The sunny side up egg on the bibimbap was barely cooked, so the creamy yolk easily spread all over the generous portion of beef and veggies upon stirring, forming a delicious sauce in combination with the Korean hot sauce.
The bibimbap was so good I forgot about the crowd and neon lights.

Variation: Rice, a mix of mildly spiced, braised seafood (squid, mussels, shrimp, octopus), a mixing sauce of soy thinned with mirin, sesame oil and scallions for haemul dolsot bibimbap.
Some people like to have bibimbap with mixed grain rice which just means that other grains like barley, wild rice, some kinds of beans were steamed along with the rice.
For bibimbap, I take gochujang (red pepper paste) and mix with some vinegar (I like brown rice vinegar aka hyunmi shikcho) I also add a little sugar, the way some people do with spaghetti sauce.
