Over the past weeks I have been asked for more dip recipes and since this is a healthy option that can be used in so many ways, I thought of featuring it.
Bigilla can be used as a spread with Hobz biz-zejt or as an accompaniment to stuffed artichokes or simply as a dip served with warm ftira or some crudites.
Bigilla can also be made with the large type of dried bean however the smaller ones are used in the original recipe.

Mum would always make a lovely clear chicken soup (I remember it being ever so hot when served) where the chicken is served as a second course with olive oil, freshly sqeezed lemon juice, parsley, boiled potatoes and fresh vegetables.
Maltese also love their pulses and the most popular hot dip is bigilla.
I love making this even now as it reminds me of the childhood days when the bigilla man used to come round with his trolley in the winter evenings and we would buy a penny’s worth of the stuff handed to you only on a piece of greaseproof paper.
