Biriyani is really just a rich meat or vegetable curry on to which partially cooked rice is put and then cooked further in an oven or on top of a stove.
Although the number of ingredients might seem daunting, leave out whatever you might not have in the spice drawer or whatever you don't like the taste of.
Biriyani is as varied as there are cooks.

One thing is for sure, getting hotel taste biriyani at home is next to impossible.
Maybe it is the way the ingredients are mixed or the style of cooking or the masalas or the multilayer technology they use or whatever - but then - I have my own style for Biriyani too - which is very simple and fast to prepare.
One the water is completely absorbed and the rice is well cooked, the BIRIYANI is ready.

Before serving, steam heat the Biriyani by placing the vessel in a large aluminum vessel or reheating in a non stick deep pan.
Chicken Biriyani can be made in the same manner except, in place of Vegetables, please cook chicken breast or chicken legs after marinating in the wet spices for about one hour and steam cooking along with either rice or separately.

Serving Usually in Africa and the Middle East, the whole BIG plate is set in the middle and every one eats hand in hand from it, sitting on the floor around it.
Every one taking a serving should take the curry and all, that is the best part, if biriyani is cooked right, I would swear it is the best food in the world as far as taste is concerned.
However, this here is chicken biriyani, the more authentic one is beef/veal biriyani, I will get the recipe for that when mom has time and I will post it here for you.
