Bison is one of the best tasting of all meats; this is my opinion, and apparently the opinion of many others, as this red meat has rapidly been appearing on the menus of fine restaurants throughout the world over the last decade.
Bison also happens to be one of the most nutritious meats on earth, which is why I eat it more than any other meat, and recommend it so highly to you.
Bison, also known as buffalo, is a highly nutrient dense food because of the proportion of protein and minerals in relation to its caloric value.

Grass fed. We are particularly interested in the proposed term "grass fed." We believe this deserves a more accurate description in order to help the consumer make a correct and informed purchasing decision.
Variations of this term include "grass grown", "grass raised", "pastured [beef, swine, poultry]" etc. All of these terms imply the animals are finished on grass, though that clearly is not the case in the proposed descripion.
For example: "Grass finished" applies to animals which have been grass fed their entire lives; may receive a minimum amount of wheat based "cake" as mineral supplements, and dried grass or hay during winter months.

The Bison Grass Production Committee of the National Bison Association considers that the current proposal to allow animals having a diet of 80 percent grass to be labeled as grass-fed is unacceptable.
(Jenkins, 2003) The National Bison Association therefore recommends that the label of ?Grass-Fed? be allowed only for animals that have been, from birth to harvest, grazed on grass, legumes and forages as 95 percent or more of their primary energy source and have received only seasonal supplements that do not exceed 30 percent starch content.
Recognizing that unusual and extraordinary circumstances may interrupt the ability of producers to provide a consistent diet of grass, the National Bison Association recommends that the new regulation provide an allowance for a temporary variance similar to that provided under §§205.290 of the National Organic Program.
