Although there are many "qualities" of bone carving to be found it is one "art form" where the look has little to do with anything, it is the "FEEL" of the work that is the important factor, something only the owner truly understands.
Carvings these days are done out of beef bone, the leg bones primarily, the older and bigger the beast the thicker the bone.
Bone that is worn a lot will eventually absorb body oils giving it the yellow translucent look, my view is that it's better yours than of some cattlebeast.

Bone carving is a craft which has been practiced since before recorded history by many cultures.

As someone who has processed over half a ton of "bovine ivory" (aka beef bones) for use as sword/knife grips...I suggest that you start out by placing the pieces on an ant hill....You will be amazed at how clean these little guys get a piece of bone..
For some of the things that I make with the bone I like to leave some of the grease from the marrow to give it a mottled look then sand it to a polished finish with 1500 grit sand paper.
