Wondering, we asked and found that borscht is served as a prelude to just about every meal, except breakfast.
Not to say borscht is bad, although it can be (a visit to the physics institute comes to mind--they had the worst, most disgusting borscht i have ever eaten), but borscht is the Russian food recycler.
I'm not against reducing waste, but sometimes it was unappetizing, such as the time they served us cow tounge for dinner--it was sliced so as to look exactly like a skinny cow tounge and was mushy, just like you'd expect if you touched a cow tounge.
