 CATHOLIC ENCYCLOPEDIA: Bremen
When the Archbishop of Cologne renewed his claims to Bremen, Pope Formosus, in 892, gave the decision that the Archbishop of Bremen was to be independent of the Metropolitan of Cologne, but should take part in the diocesan synods of Cologne.
The city of Bremen with the surrounding territory was in 1731 recognized as a free city of the empire, and in 1803 received an increase of territory; in 1815 it entered the German Confederation, in 1866 the North German Confederation, and in 1871 the German Empire.
Through the efforts of Archbishop Adaldag (937-988) Bremen received the privileges of a market town, and in 967 the same archbishop obtained the jurisdiction of a count over the city, as well as various crown-lands from Otto I, thus laying the foundation for the temporal possessions of the archbishops of Bremen.

 CATHOLIC ENCYCLOPEDIA: Hanover
Their names will always reflect honour on the German episcopate: names such as those of Bishop Bernward and Bishop Godehard of Hildesheim; of Liemar and Adalbert, Archbishops of Bremen; of Benno II of Osnabrück; of Meinwerk of Paderborn, and others.
The Bishopric of Bremen, under St Willehad, was added to the number in the year 787.
Most of them had to fight against the encroachments of their temporal and spiritual neighbours, and the nobility in general, so that the entire period prior to the sixteenth century was taken up with endless, devasating feuds, both internal and external.

 Swedish War on Bremen, 1666
Sweden interpreted the Treaty of Westphalia as granting her the sovereignty over the Princebishoprics of Bremen and Verden, as well as over the city of Bremen; the city council of Bremen thought otherwise, insisting on her status as an immediate city, long practiced, but confirmed only in 1646 (Linz Privilege).
The second Swedish War on Bremen began on January 27th 1666 with Swedish troops landing on Bremen territory, Swedish commander Wrangel already in February was ordered to enter into negotiations; in June, he was ordered to cut the suppl lines of Bremen; and on November 15th 1666 the Treaty of Habenhausen was signed.
Bremen had strong fortifications, a garrison of 1500 men and 6000 burghers who could be drawn into the militia.

Today Verden is the center of the animal husbandry in Lower Saxony and based on the horse auctions Verden is also called Reiterstadt (riders town).
The Johannis church, the townhall, the Scharfrichterhaus (building of the executioner), the pedestrian precinct, the fischer district (old part), the Domherrenhaus (todays Historical Museum), the Horse Museum, the Andreas- and Josef church and of course the cathedral are some of the great sights of Verden.
As Verden has a clerical past as a bishopric many sacred buildings and remainders of the Middle Ages in the old part of the town make up a pictorial townscape.

I think you should stay within a triangle of Bremen, Hamburg (which is 100 quick kilometres from Bremen) and Hannover/Kassel.
If you feel like going to the beach, closest from Bremen would be Cuxhaven, a busy family-oriented resort, but also a seaport.
Hannover is the capital of Lower Saxony, it's a nice place, but not as nice as Bremen and Hamburg.
