Somerset - Wikipedia, the free encyclopedia
Somerset is a largely rural county famous for its rolling hills and downland, the large flat Somerset Levels, and the Exmoor National Park which straddles the border with Devon.
In the north east the Mendip Hills are high, often bare mountain limestone hills with an extensive network of caves and underground rivers and a number of gorges, famously Cheddar Gorge.
To the south of the hills, on the clay substrate, are a number of small valleys which support dairy farming and drain into the Somerset Levels.

Waitrose.com - The Corker on British Cider - Waitrose Food Illustrated
Personally, I prefer cider made from the often tannic and relatively juiceless cider varieties; that tannic bite helps give the drink a grown-up complexity and depth, just as it does in red wine, and cider-apple ciders are nearly always better with food than those made from culinary and dessert apples.
The aromas are sweeter and more dappled than classic English ciders, as if you were strolling through an orchard thick with fallen fruit towards the end of autumn, and the scent of bleeding juice and the bloom of mould was mingling with the cleaner, fresher scents of the fruit itself.
The earthy orchard aromas that come charging out of the glass seem as timeless as the hills in which the trees dig their roots, and the flavour is mouthfilling, pure and perfumed, with apple flavour and tannin aplenty.
