One of the reasons we decided to serve French cuisine in that dear but difficult old basement space in Union Square, and not just Cambodian, was to broaden our appeal.
The fact was, I argued, a restaurant that was both Cambodian AND French restaurant would be an authentic expression of her family's life experience that people would find intriguing.
