RAW files are in a proprietary format that is unique to each manufacturer, and often unique to each specific camera model.
Camera manufacturers provide special software for decoding their RAW files, sometimes free with the camera and sometimes as an extra cost option.
With Camera Raw I believe that we have gotten as close to an intuitive and simple to use method of working with RAW files as we are likely to see for some time.

The Camera Raw Database is a proprietary Adobe file that is hidden in the bowels of you computer and remembers what settings are used for each file.
In Photoshop Camera Raw, to switch between using the Camera Raw Database and Sidecar files, go to the ACR Preferences by clicking on the same small triangle at the top of the settings area that we used to set the camera defaults previously.
Camera Raw 3.1 will include preliminary support for the Nikon D2x (something I am looking forward to) and Canon Rebel XT (something probably at least a few of you may be looking forward to).

If you've saved the file in-camera as a JPG than it is converted by the camera's software to 8 bit mode and you will only ever have 256 brightness levels to work with.
There are too many to mention here, so I'll just mention the two most popular and arguably the two best, the Camera Raw converter that is now built in to Photoshop CS (it used to be available as a plug-in for Photoshop 7), and Capture One from Phase One.
If we allow the file to be saved in raw format though we have the opportunity to do the conversion on a more sophisticated platform, and to do so again and again if there's any benefit to this in future.

RAW is most value for digital photographers who produce a lot of prints because it allows you to do critical edits without destroying the histogram.
RAW software processors are effectively giving you the same control over the digital negative, a means to juice the color and contrast of a photo to create those various looks.

A number of photographers who shoot exclusively in RAW choose to do their image sorting in Camera Raw itself (rather than in Adobe Bridge), and if that’s the case, you can decide which images to delete from right within Camera Raw.
However, if like many people, you do most of your RAW processing in Camera Raw (leaving Photoshop free to do things like retouching and collaging), then you can configure Bridge so that when you double-click on a RAW photo, it opens in Bridge, rather than in Photoshop.
By default, when you open a RAW image in Camera Raw, it automatically tries to correct the image exposure for you (that’s why those Auto checkboxes are turned on right below Exposure, Shadows, Brightness, and Contrast).
