The Cangjie method (仓颉输入法) is a system by which Chinese characters may be entered into the computer.
Invented in 1979 by Chu Bang Fu (朱邦復), the method is named after Cangjie, the man usually attributed with the invention of the first writing system of China.
Unlike pinyin, Cangjie is based on the morphological aspect of the characters wherein each basic, graphical unit is represented by a letter from the Roman alphabet.

Although right now I can't type as fast in Chinese as in English, I think mastering the Cangjie method gave me unprecedented freedom in expression my thoughts in Chinese rather than relying on English to record my ideas in written form.
As for using phonetic methods for entering Chinese text, they are great to use but it makes people forget the character structure very easily.
Perhaps the only shortcoming that comes out of learning Cangjie is that I don't really need to use a pen to write Chinese anymore, so my calligraphy skills have practically become non-existent.

I use the Pinyin method frequently and the cangjie method on occasion when I cannot remember the pronunciation of the wanted character.
Which has extensive information about how to install the default Chinese input methods that come with Mac OS X, as well as everything else anyone could possibly want to know about using Chinese on a Mac.
There is a Cantonese input method I know of but it isn't very good.
