 Canon
Canon's proprietary EF (electro-focus) lens, which combines a large-diameter fully electronic lens mount and an internal autofocus motor, was born in 1987.
Canon's EF lens lineup, through the introduction of the latest innovative technologies, has consistently been recognized as the state of the art in the industry.
Canon EF lenses span the gamut from ultra-wide 14mm to super-telephoto 600mm lenses and include standard and super-telephoto zoom models, large-aperture lenses, and TS-E lenses, which are equipped with a special tilt-shift mechanism that permits the manipulation of image perspective and distortion.

Canon EF-S lens mount - Wikipedia, the free encyclopedia
The EF-S lens mount is a derivative of the EF lens mount created for a subset of Canon digital single-lens reflex cameras with APS-C sized image sensors.
The cameras that use the EF-S mount are: the Canon EOS 300D, 350D, 400D, 20D, 20Da, and 30D digital SLRs.
This is because the increased proximity of the lens to the sensor means that on full-frame sensor or 35mm film EF cameras the lens itself would obstruct the mirror's movement and cause damage to the lens and/or camera.

 500 vs 600
Canon 600mm f/4L IS I tested the 600mm f/4 on a fall wildlife shoot in Yellowstone National Park in October, 2002 and then the 500mm f/4 just two months later on a workshop and shoot which I conducted at Bosque del Apache in December.
One aspect of using such a large lens that needs to be borne in mind is the mount required.
I have both, and frankly while the full-sized Wimberly is preferable, regardless of which sized lens you choose, it means either dedicating a tripod to it or facing the tedious and time consuming task of removing the head and replacing it with your usual ball head when you want to use shorter lenses.

L — Canon's designation for their top-of-the-line lenses is the letter L. These lenses are the best that the company knows how to make at any given focal length and aperture, and of course for a given price (which in the case of L series lenses is usually high).
The lens' finish is fl, with the green stripe first seen previously on the 400mm lens; the mark of a DO lens — the way that the red stripe is the sign of an L series lens.
Zooming is via a rotating rubberized collar close to the lens mount, and because of the use of USM manual focus override can also be used at any time.

NEWS! - Canon announces new lenses, EF-S mount
Canon, a leader in photographic and imaging technology, today releases the EF-S 18-55mm f/3.5-5.6 zoom lens, designed to work exclusively with the new EOS 300D, also released today.
The new lens was therefore given a focal length of 18-55mm, which is equivalent to 29-88mm in the 35mm film format.
A white lens mount index (in addition to the traditional red marking) differentiates the lens from other EF lenses and a rear rubber ring prevents any damage in the event that an inadvertent attempt is made to mount the EF-S lens on a camera other than the EOS 300D.

EF means that the lens is of the Canon EF type.
Canon sell a number of lenses in a special series they refer to as L for “luxury.” These are their most expensive and highest-quality lenses, and are readily identifiable by the red stripe painted around the end of the barrel.
Canon also sell and have sold a number of prime (ie: non zoom) lenses with acceptable optics and average build quality (usually with noisy motor drives, metal mounts and distance scales), such as the 28mm 2.8 and 50mm 1.8 (metal lens mount).

The Canon EF 70-300mm f/4-5.6 IS USM telephoto zoom lens has been developed to meet the high-performance standards that today's digital slr and 35mm photographers demand.
Compared to the original Canon EF 75-300mm IS telephoto zoom lens, this lens has faster autofocus, and overall the Canon EF 70-300mm IS Zoom Lens is lighter and has a smaller diameter than the original.
The Canon EF 70-300 IS USM telephoto zoom lens is ideal for both Digital and 35mm photography with most Canon EOS SLR Cameras including the 30D, 20D, 10D, Digital Rebel (all models), 5D, 1D, 1Ds, as well as the Elan and Rebel 35mm SLR Cameras.

The Canon EF lens mount is their standard Autofocus mount.
The Canon EFS lenses are designed to work with EOS digital SLRs that have a digital sensor that is smaller than a 35mm film frame.
EFS lenses project a smaller image onto the digital sensor than standard EF lenses do, so for that reason, they won't work well with film cameras or digital cameras that have full-size digital sensors.

 Technology: EF Lens Mount
With the elimination of mechanical connections and the incorporation of an electronic interface between the camera and lens, Canon cameras have greater flexibility with regard to incorporating future technologies and future system upgrades.
The fully electronic mount system has none of the shock, operational noise, abrasion, play, lubrication requirements, slow response, diminished precision caused by lever operation, or design restrictions related to linkage mechanisms used to transfer data.
Allows the development of super-fast, super-bright optics such as the EF 50mm f/1.0L USM, which was previously impossible to achieve with earlier lens mount systems.

Instead, near the mount is a filter holder that can be withdrawn from the lens barrel to allow the use of gel filters (a gel holder is supplied), screw-in filters or a rotateable polarising unit.
The Canon EF lens mount has no mechanical control connection between body and lens - all signals for focus, aperture, etc., plus information the flash system uses like zoom settings - are transmitted electronically.

Canon EOS 5D Review: 1. Introduction: Digital Photography Review
Canon's press material for the EOS 5D states that it 'defines (a) new D-SLR category', while we're not typically too concerned with marketing talk this particular statement is clearly pretty accurate.
The EOS 5D is unlike any previous digital SLR in that it combines a full-frame (35 mm sized) high resolution sensor (12.8 megapixels) with a relatively compact body (slightly larger than the EOS 20D, although in your hand it feels noticeably 'chunkier').
While Canon don't specifically refer to the EOS 5D as a 'professional' digital SLR it will have obvious appeal to professionals who want a high quality digital SLR in a body lighter than the EOS-1D.
