The unorthodox training regime continued at home and Cap Classique was checked regularly to ensure he was fit and well and that physically all was in good order.
In his second run Cap Classique dropped was too far off the pace in the early running (jockey received a ban) but by the end of the race was running on promisingly into fourth to show the talent that his owners and his trainer had always believed was present.

This means that the wine undergoes a natural, secondary fermentation in the bottle and follows the traditional process of disgorgement where the collected yeast is frozen and extracted from the bottle.

There were 37 entries for this year's WINE magazine Amorim Cork Cap Classique Challenge, nine of which came from the Graham Beck winery in Robertson.
Aldehydic character (licorice, baked apple) was a case in point, with the panel agreeing that while some considered this desirable, most now deemed it old-fashioned, the preference being for a fresher, livelier style of Cap Classique.
The panel was impressed, however, with the capacity for Cap Classique to age in the bottle, and the Graham Beck Blanc de Blancs 1991 received particular praise.

With Robertson’s growing reputation for Cap Classique sparkling wines, it’s not surprising to hear the chardonnay is destined for bubbly.
This could chalk up a few more firsts for the farm for not only will the wine be a new member of the Bon Cap range, it could also be the first organic Cap Classique on the market.
Bon Cap is the biggest privately owned organic winery in South Africa, with its grapes receiving organic certification under both European and USDA standards.

Pieter Ferreira is one of South Africa's foremost winemakers, especially for his pioneering work in the making of cap classique, the local version of champagne.
It is certainly true that he is committed to finding the perfect bubble in his Cap Classique wines and, if there is such a thing, there is little doubt that Pieter will find that elusively flawless little envelope of air one day.
His Cap Classique has won numerous local and international awards but the one that he remembers the most, is that it was served at the inauguration of Nelson Mandela in 1994.

The 2005 harvest arrived early at Bon Cap Organic Winery in Eilandia, Robertson when the first Chardonnay grapes were handpicked on the 6th of January at 06:00 am.
These grapes are destined for Bon Cap’s first Cap Classique, another addition soon to be made to the estate’s range.
Malherbe commented that Bon Cap winemaker Jacques Conradie and owner-winemaker Roelf du Preez are very excited about the quality of the grapes and predict that the 2005 vintage will be one of very high quality for Bon Cap.
