Castelnaudary is a commune of the Aude département in southwestern France.
The 4th Foreign Regiment of the French Foreign Legion is based in Castelnaudary.
Castelnaudary is the self-proclaimed "Capital of Cassoulet", which should include haricot beans, duck confit, other meat bits (bits of bacon, etc.), Toulouse sausages, vinegar, red wine, herbs, seasoning.

CASTELNAUDARY, a town of south-western France, capital of an arrondissement in the department of Aude, 22 m.
Castelnaudary probably represents the ancient town of Sostomagus, taken during the 5th century by the Visigoths, who, it is conjectured, rebuilt the town, calling it Castrum Novum Arianorum, whence the present name.
Early in the 13th century the town was the scene of several struggles during the war against the Albigenses, between Simon IV., count of Montfort, and Raymond VI., count of Toulouse, and their supporters.

Thirty-six kilometres west of Carcassonne, on the main road from Toulouse, CASTELNAUDARY is one of those innumerable French country towns that boast no particular sights but are nonetheless a real pleasure to spend a couple of hours in, having coffee or shopping for a picnic in the market.
Today it serves as an important commercial centre for the rolling Lauragais farming country hereabouts, as it once was for the traffic on the Canal du Midi.
However, Castelnaudary's chief claim to fame is as the world capital of cassoulet, which, according to tradition, must be made in an earthenware pot from Issel (a cassolo) with beans grown in Pamiers or Lavelanet, and cooked in a baker's oven fired with rushes from the Montagne Noire.

Emboldened, Raymond of Toulouse led a force to attack de Monfort at Castelnaudary in September.
De Montfort broke free from the siege but Castelnaudary fell and the forces of Raymond went on to liberate over thirty towns before grinding to a halt at Lastours in the autumn.
In 1220, Castelnaudary was taken from de Montfort, and while Amaury de Montfort attacked the town from July 1220, the town withstood an eight month siege.

Castelnaudary has a pot of steaming beans (I kid you not) Enough said.
Castelnaudary is the "birthplace of cassoulet." It's also a center of furniture making and not all that fascinating a place.
It sounds like Castelnaudary is a place to turn up on a train for three hours to have a cassoulet lunch then hop on to another train and travel to Carcasonne for two hours - walk around and then depart for Nimes or maybe an itinerary rethink !

Cassoulet can be translated as "bean pot stew" or "white bean stew" or "meat and bean casserole".
Origin of cassoulet is not very clear some historian say it is an Arab dish, some other says it was created in Castelnaudary during the Hundred Years' war
In France, there are as many cassoulet recipes as cook but for all recipes there are some basic rules to follow : A good cassoulet has to include 70% of haricot beans, juice and aromates and 30% of meat and you have to keep in mind that it is a simmered dish.

This page contains just a brief look at Castelnaudary and the 4eme R.E., where my Legion career began with basic training in February 1980.
To be honest, neither stay at "Castel" was particularly pleasant, so it's just as well that I don't have too many photographs on this page to remind me. Having said that, the time spent in Castelnaudary was part of my Legion experience, so good or bad it's still worth a mention.
