Chef - Wikipedia, the free encyclopedia
Generally, it is either equivalent to an executive chef position, a position overseeing numerous establishments in a group of restaurants in charge of several executive chefs or a position equivalent to a sous chef, under the command of an executive sous chef.
The sous chef (pronounced "soo-shef" -- French for "under chef") is the direct assistant of the executive chef.
Larger kitchens often have more than one sous chef, with each covering a certain shift or having his or her own area of responsibility, such as the banquet sous chef, in charge of all banquets, or the executive sous chef, in charge of all other sous chefs.

I think finally people are realizing that the chef is not personally fussing over their food, and that the chef is not getting up at 4 am to go to the fish market and wiping down the counters at 1 am after working the service.

Kuhn Rikon Switzerland - Celebrity Chef Cinda Chavich
Whether I'm eating in Sonoma or St. John's Newfoundland, I see chefs, and home cooks, searching out the freshest food, from the closest farms in their areas, paying a premium for food that's ripe and produced by someone they know.
I think people are learning to appreciate the flavors of freshly-picked fruits and vegetables and are keen to eat organic, free-range and wild meats and fish, both for health and taste-and to support a more environmental and sustainable way of living.
But my most important tool is a good chef's knife - I am quite smitten with my one-piece Furi knife, sort of a hybrid chef's knife and cleaver - and I couldn't live without a good serrated bread knife and a tough little paring knife.

Antonin Carême was the most illustrious chef of post-Revolution France—Napoleon, the Rothschilds, and Tsar Alexander all employed him—and he is still remembered as the father of modern French cuisine, the popularizer of the soufflé, and the designer of the iconic chef's hat.
Almost all great chefs were employees of wealthy families, former nobility, or they were pastry chefs, as boulangerie and patisserie were much better established and patisserie offered a medium in which great talent can achieve expression.
In addition to telling the story of the great chef, this book also provides a lot of insight into the history of food and its evolution, and some of the "dark" side of being a chef during the days of Careme.
