Topic: Champagne wine

Champagne (beverage) - Wikipedia, the free encyclopedia
Champagne is typically a white wine even if it is produced with red grapes, because the juice is extracted from the grapes using a gentle process that minimizes the amount of time the juice spends in contact with the skins, which is what makes red wine red.
Most Champagne is non-vintage, produced from a blend of years (the exact blend is only mentioned on the label by a few growers), while that produced from a single vintage is labelled with the year and Millésimé.
Champagne is usually served in a champagne flute, whose characteristics include a long stem with a tall, narrow bowl and opening.

 Wine Pages - About Champagne
By the Champagne method, the carbon dioxide gas produced as part of the fermentation process (as yeasts devour sugar) is dissolved within the wine in its individual bottle, so that when it is released, the bubbles stream to the surface.
In truth, if the wines from the region were not sparkling, Champagne would hardly figure on the world wine map: the climate is such that grapes struggle to ripen and the basic wines that are produced are extremely thin and acidic.
It is after the addition of the second dose of yeast and sugar, as the wines lie in the cool chalk cellars, that Champagne begins to fill-out and transform.

Champagne Guide: all about Champagne, including how Champagne is made
Firstly, most houses will take a selection of still wines made from the grapes of more than one area, as this far north it is not commercially viable to rely on just one or two individual vineyards.
The wine in the bottle is still a blend of wines from several years, the year on the label indicating only the year which the finished, blended wine was laid down in Heidsieck's cellars to mature.
Other points of interest include the rosé Champagnes, which may be made by either allowing the wine to stay in contact with the red grape skins for a while (the saignée method), or by adding in a little red wine to colour the product.

 Boston.com / Business / A sommelier's tips for buying champagne
To properly be called ''champagne," the wine must come from the Champagne region of France.
What makes champagne different may not be obvious to the untrained palette -- it has to do with things like climate, soil, and growing season, as well as the way the wine is aged, which produces what Fallon calls a bready flavor.
The less expensive champagnes are usually nonvintage, meaning they are made from a blend of juices from several years.

 Celebrating Champagne — Into Wine
Champagne also benefited when the cathedral at Reims was chosen in 987 AD, as the coronation site for the French king Hugh Capet and establishing Reims as the spiritual capital of medieval France.
Although sparkling Champagne was only about 10% of the region's output in the 18th century, it was enjoyed increasingly as the wine of English and French royalty and the lubricant of preference at aristocratic gatherings.
By 1735, a royal ordinance was instituted to dictate the size, shape, and weight of champagne bottles, the size of the cork they should use and that they be secured with strong pack thread to the collar of the bottle.

Champagne - The UK Directory of Champagne Suppliers
The best Champagne houses and growers pride themselves on providing a continuous house style through the judicious blending of various vintages.
In an ideal world a house would not declare a vintage in a good year if they needed the wine to keep up the standard of their non-vintage, but seldom happens these days.
Most non vintage Champagnes are based on wine from a single year, with added reserve wines from previous vintages, minimum ageing before release is 15 months, but all good houses are giving their wines considerably longer, which does wonders for their flavour.
