Horses from the "champagne" dilution are born with bright blue eyes which are much lighter than the grayish-blue, navy blue, or steel colored eyes many foals from other dilutes are born with.
In horses of questionable color, unless there is an accurate record of the horse made since foaling showing the bright blue eyes at birth, pinkish or mottled skin, and darker foal coat color shedding out lighter, I would hesitate to classify the horse as a champagne.
The color of the sire is not mentioned, but there are good pictures of Skipablue San Poco (Grace) as a foal showing her champagne characteristics, her dorsal stripe, and pictures of the dam.

The gold champagnes are called flaxen or self gold depending on the color of their mane & tail.
If both of the parents are heterozygous (carry one copy of the gene) for champagne, you have a 25% chance of getting a chestnut, a 50% chance of a heterozygous champagne, and a 25% chance of a homozygous champagne.
Since the champagne gene does not seem to be different in appearance if the horse has one copy or two copies of the gene the only way to know if an individual is homozygous is test breeding.

It existed on the Century in 1965 (replacing the earlier cream/lavendar color in late '65) and, in 66, was one color, along with red/clear and green/blue, offered on Aristocrat, Decorator, Consort, Princess, Empress, Regency, Nite Lit, Prayer Lites, Continental and Savoy, and Imperial.
In 1968, it was replaced by orange/yellow (an original Century color) on all models except the Continental.
