Charles de Lorraine, duc de Mayenne, (March 26, 1554–October 3, 1611), or Charles de Guise, was a French nobleman of the house of Guise and a military leader of the Catholic League, which he headed during the French Wars of Religion, following the assassination of his brothers at Blois in 1588.
Mayenne was urged to claim the crown for himself, but he was faithful to the official programme of the League and proclaimed Charles, cardinal of Bourbon, at that time a prisoner in the hands of Henry IV, as Charles X of France, although this numbering is not accepted by historians.
Mayenne entered into negotiations with Henri IV while he was still appearing to consider with Philip II the succession to the French crown of the Infanta Isabella Clara Eugenia of Spain, daughter of Elizabeth of Valois and granddaughter of Henri II.

 CATHOLIC ENCYCLOPEDIA: House of Guise
The dukes of Guise, however, as descendants of the House of Anjou, had certain pretensions to the Kingdom of Naples, and it was doubtless with the secret intention of defending these claims that François de Lorraine furthered an alliance between Henry II and Pope Paul IV which was menaced by Philip II.
This stipulated that, at the death of Henry III, the Cardinal de Bourbon, Archbishop of Rouen (1520-90), the third son of Charles de Bourbon, Duke of Vendôme, should be recognized as heir to the crown, "to the exclusion of all French princes of the blood at present heretics and relapsed".
Mayenne could not openly oppose the project, but he shrewdly caused the Parlement to issue a decree forbidding the transfer of the crown to foreign princesses or princes (28 June, 1593), the result of which was the abandonment of the Spanish match.

 CATHOLIC ENCYCLOPEDIA: Lorraine
Lorraine, moreover, included within its boundaries the original home of the Austrasian dynasty, with Aachen, Charlemagne's capital, and the most important centres of ancient culture: two archbishoprics (Cologne and Trier), many bishoprics (Metz, Toul, Verdun, etc.), abbeys and royal castles.
The southern part, Upper Lorraine, or the Land of the Moselle, extended to the south-east of the Vosges and to the Sichelberg, with the Archbishopric of Trier and the Bishoprics of Metz, Toul, and Verdun.
Besides, the dukes were, as a rule, involved in the quarrels of the German suzerain and also took part in the Crusades; for piety and devotion to the Church distinguished most of them, in spite of their warlike character.

Since the death of the Duke of Parma [on the 2d of December, 1592, in the Abbey of St. Waast at Arras, from the consequences of a wound received in the preceding April at the siege of Caudebec], it seems that deeds of arms have given place to intrigues and contests of words.
The great leaders of the party, the Duke of Mayenne, his mother the Duchess of Nemours, his sister the Duchess of Montpensier, and the Duke of Feria, Spanish ambassador, were within its walls, a prey to alarm and discouragement.

Mayonnaise is generally said to have been created by the chef of Louis François Armand du Plessis, duc de Richelieu in 1756, to celebrate the Duke's victory over the British at the port of Mahon (the capital of Minorca in the Balearic Islands).
In fact it may appear more credible that sauce Mayonnaise was originally named for Charles of Lorraine, Duke of Mayenne (in northwest France), who presided over the meeting of the Estates General in January 1593 that had been summoned for the purpose of choosing a Catholic ruler for France.
It may then have been christened "Mayennaise" in 'honor' of Charles de Lorraine, duc de Mayenne, because he took the time to finish his meal of chicken with cold sauce before being defeated in battle by Henri IV.

The Valois king, Henry III of France feared the power of the Guise faction and thus accepted the existence of the league but made himself its commander, eventually disbanding it in 1577 after using it to win several victories over the Huguenots.
Charles of Lorraine, Duke of Mayenne won battles for the Catholic League.
In 1588, after the murder of Henry of Guise, the league rose up against the king in favor of the imprisoned Cardinal de Bourbon, whom they proclaimed "Charles X" (the next person to claim this title was Charles X of France, brother of Louis XVI).

The French spelling for this Spanish port is "Mah'n", and thus "sauce from Mahon" is "sauce ma'nnaise", from which it was said the word "mayonnaise" was derived.
