The cheesesteak, known outside the Philadelphia, Pennsylvania area as the Philadelphia cheesesteak, Philly cheesesteak, or steak and cheese is a sandwich principally of sliced pieces of steak and one of three types of cheese.
The cheese is either melted beforehand by a warmer or is melted by the heat of the freshly cooked steak.
A steak sandwich topped with pizza sauce and sliced or crumbled mozzarella constitutes a pizza steak, which is often placed briefly in a pizza oven or under a broiler to melt and lightly brown the cheese.

For the uninitiated, a cheese steak is a freshly baked hoagie filled with thinly-sliced roast beef, grilled onions and peppers, and melted cheese, hopefully Provolone, though soem swear by the Cheese Whiz (ugh!).
The steak is ground perfectly and they don't use cheez whiz like some of the other famous Philly cheese steak joints.

In the twin cities their is supposed to be an authentic cheese steak shop run by a South Philly transplant that my son told me is close to the real deal.

Philadelphia Fevre makes a good cheesesteak, the meat is right, the onions are right, the cheese is right, they even have melted cheez whiz for the fries; however the bread is lacking, not their fault per say as flying Amoroso rolls out is probably cost prohibitive, but the local bakery Gai's does not cut it.
I was just there eating a Cheese Steak Hoagie (raw onions) two weeks ago, I sat in the lower level by the pickle bar right under the picture of John LeClair (go FLYERS!), but for outside of the Philly area I must say that Philly West in Bellingham WA does the best job.
The menu is impressive with the classic steak and cheese as the mainstay, but also featuring a variety of combinations for every taste as well as a tasty chicken option for almost every sandwich.

Haven't been back since, not because it was a bad experience, but the cheesesteaks were no better or worse than what we can get in the 'burbs and consume more genteely at a table somewhere.
Bread was good but the portion of meat was lame, had one teaspoon of onions and the cheese was just put on the bread not even near melted.
Any way had a steak sub the next day at Pats very uneventfull would'nt go out of my way to go back but I would for Ralphs.

I disagree---Lee's Hoagie might give a run for the money, but the ambiance (or lack of it) at Pat's along with the steaks really do it for me. Admittedly, I am a purist and do not go for the lettuce, tomato, and the various options of cheese.
Harry Olivieri, who with his brother Pat, after whom the restaurant is named, started Pat's Steaks in 1930, died this afternoon.

For a brief stint I lived up in the new england area and they called it steak with cheese, I almost went berserk.
I had a steak in Boston once and I was glad they called it a steak with cheese.
They throw on some cheese and then broil it just a few seconds in the pizza oven to melt the cheese and brown the tasty, crusty roll.
