Chen Kenichi (陳建一, born January 5, 1956 in Tokyo, Japan), whose name is often romanized Chin Kenichi in Japanese sources, is a chef best known for his role as the Iron Chef Chinese on the television series Iron Chef.
Chen is the son of Chen Kenmin, who is regarded as the father of Sichuan cuisine in Japan.
As a result, Chen is often compared to his father on the series, with some saying that Iron Chef helped the son exceed the skills of the father.

All I know is that we see Chen tossing the deep-fried potatos with onions and possible one other small, minced, white vegetable.
Since we know he intends for the skins to be eaten, I would guess that some salt and pepper is added during the onion/garlic step.
This displeased Chen, so I'm guessing that it was not supposed to have that flavor.

We cheer when he appears to have a lock on the win (which any Iron Chef usually does) and sympathize when the theme ingredient is something he doesn't quite know what to do with.
