One regrettable trend in the Dominican restaurants near me in Brooklyn is that they have all abandoned traditional chicharrones made from pork and only serve chicharrones de pollo.
I ascribe this to the same automatic anti-(obviously apparent) fat mentality that has caused so many soul food places to replace ham hocks with smoked turkey in their collard greens.
Not to denigrate pork chicharrones in any way, but a good chicharron de pollo is a wonderful thing too.
