Chilaquiles are a way of using up old (corn) tortillas and it's one of those names that is more a kind of a preparation rather than a single, specific combination of things.
At Nuevo Leon, they serve their chilaquiles with egg but at, for example, La Kermes in La Villita, they serve them in a green sauce with an optional fried egg on top.
Nuevo Leon serves their chilaquiles with wonderful beans and rice, made with love and lard, and house-made flour tortillas.

This is a kind of flat bread that is made with semolina, white flour, salt, water and yeast, rolled out very thin and baked twice, to produce a round, very thin and crispy flat bread.
For example, they are rehydrated, dressed with tomato sauce and grated cheese and baked or dressed with tomato paste and olive oil and used as a base for fried eggs.
I have elsewhere sung the praises of stale Italian bread (D'Amato's long loaves are particularly good) used as a base for beans or beans and greens and also as a sort of substitute for maccheroni, dressed in a simple tomato sauce with some pepper and cheese.

I ask and nobody knows here what they are, or they bring me something that are like sopes or migas you might eat for breakfast.
I want some good old fashioned chilaquiles verdes con pollo like you could find in Mexico at any VIPS or Sanborns or in a home.
It was my unerstanding that they could be made many different ways, that they were something made of little bits of leftover this and that.

Chilaquiles is in simpliest forms, left over tortillas with left over chili eaten for breakfast...okay, really anytime.
They were true Ohio Chilaquiles, and I savoured every mouthful.

What I call chilaquiles is totally different from this, though.
It's onions and peppers and tortilla strips sauteed with salt and pepper and chili powder, then eggs poured in and cooked for a bit, then shredded cheese and chunks of avocado on top and slip it under the broiler.
I don't know why this one is "chilaquiles" but it's very similar to something with that name in one of the Moosewoods, and in another veggie cookbook I have.

CHILAQUILES 12 corn tortillas 8 oz or more of ff mozzarella or monterrey jack 1 pint ff sour cream sliced jalapenos (ones in a jar), your choice as to how many Soften tortillas by damping each one with water and then placing 6 in stack; wrap with wax paper and nuke for 50 seconds.
In a casserole, place alternately layers of torillas, sour cream, cheese, jalapenos slices, and sauce; I usually have a total of 3 layers.
