Ciabatta is great on its own, with pasta or salad, wonderful dipped in olive oil, and downright heavenly enveloping prosciutto and fresh mozzarella.
Ciabatta begins with a starter known as biga, an Italian-style fermented sponge that produces an uneven, moist texture.
Ciabatta dough needs to be handled gently to avoid deflating the air bubbles produced during the long fermentation – the very things which give ciabatta its telltale texture.

 bakingsheet: Perfect Ciabatta
I think the reason that the texture turned out so well is probably the fact that it received only the barest minimum of kneading during its rises, hence there was very little risk that I would over- or under-knead it.
I used the recipe for the Very Lightest Ciabatta from King Arthur Flour but I made a few changes.
The two minor changes were using active dry yeast instead of instant yeast and reducing the amount of olive oil to an amount that I would describe as a "splash".

Kulsoom Klavon, 7-Eleven product development director for fresh foods and bakery, said in a press release that the company's food development team has been working more than a year to create a ciabatta recipe consistent with true European artisan breads which, ironically, are known for their inconsistency.
To retain the characteristics of ciabatta bread--moist, dense bread with a chewy crust--7-Eleven was challenged with developing a version that would not dry out before it reached consumers.
According to Kathy Hasty, 7-Eleven's sandwich category manager, ciabatta's popularity reflects the "natural evolution" of food trends in the United States.
