The Ambraser Codex is dated to 1459 by many authorities, however I don’t believe this to be the case: The clothing illustrated in the work is much earlier than that; compare the high waists and low skirts of the doublets with those of the Alte Armature und Ringkunst or with the 1467 fechtbuch.
The second section of the Wallerstein Codex is of a much earlier date than the first part; I would estimate it as being from 1410-1415, making it one of the very earliest fechtbücher in existence.

If you look at Wallerstein pl. 181 (http://www.thehaca.com/Manuals/187.jpg) you can see a shield on the ground with a clear forearm strap, another for the hand or wrist, and the guige at the top.
Wallerstein does not show any fighter with a guige around his neck, and half the images clearly do not show any sign of a guige.
Second, while none of the pictures in codex Wallerstein clearly show a guige in use, they nonetheless *do* show them present, and one shows the guige unstrapped while the shield lies on the ground, suggesting it had been unfastened before being removed: http://www.thehaca.com/Manuals/187.jpg

By itself this manual doesn't really seem to be a complete fighting system: for example, the basics of longsword use aren't included; you almost get the feeling you're reading "tips" for an already experienced swordsman.
The first part, which the translators call "part A" is clearly late-15th century German, and includes unarmored longsword, messer, dagger and wrestling techniques with fairly extensive written commentary on each plate.
I don't find this to be a bad thing at all, but the text and pictures are a bit difficult to understand unless you already have a very solid grounding in German MMAs.

This one is known as the Codex Vindobonensis Palatinus 10.825.
One such guard is called the “obers henngen” or “upper hanger.” This is illustrated in plates 43 and 44 of the Dresden Codex.
They may include material from other manuscripts (certainly from the Codex Wallerstein), but the illustrations are not just simple copies of those from other sources.

However, the Codex translation (plate 81) makes clear that this drawing depicts the prelude to the equivalent of tomoenage, a throw in which the thrower grasps the throwee, sits on his butt, puts his foot in the throwee's stomach, rolls back and launches the unfortunate throwee over his head.
Again, this is a reasonable interpretation, but the Codex translation (plate 90) makes clear that this is not a head butt after all, but a one-arm tie-up.
