Coleslaw - Wikipedia, the free encyclopedia
Coleslaw (or cole slaw) is a salad consisting primarily and minimally of shredded, raw, white cabbage, although it often also includes shredded carrots.
However, modern coleslaw could not have arisen until the 18th century as mayonnaise was not yet invented.
In addition to calling it "coleslaw," U.S. Southerners also refer to it as "slaw." Because of this the two syllables and the establishment of "slaw" as its own word, various other kinds of "slaw" are now known, such as broccoli slaw.

Coleslaw is the all-American side dish that we associate with summer’s dining and picnic fare.
The principle factor in coleslaw is, of course, raw cabbage, though contemporary recipes often call for such unusual ingredients as fennel, turnips and artichoke hearts.
Dressing for coleslaw can be as basic as oil and vinegar or oil and lemon juice, though many dressings incorporate mayonnaise or sour cream, for a creamy quality, as well as the nutty, spicy highlights of caraway or celery seeds.

Coleslaw is of Dutch origin, as is the dish it describes.
The Dutch word is koolsla, formed from kool 'cabbage', related to the English words cole and kale, and sla, a reduced form of salade, borrowed from French, the same source of English salad.
The word coleslaw is an Americanism, first found in the late eighteenth century, a period of heavy borrowing of Dutch words into American English.

 So long, so-so coleslaw
Side dishes including coleslaw and Mom's old-fashioned potato salad and baked beans are always welcome, and when the corn and tomatoes are fresh, there's nothing better - except maybe a blueberry pie or peach cobbler enrobed in buttery, rich dough.
So with that in mind, it's time to salute the sides of summer, and coleslaw seems like a good starting-off point.
From the Dutch meaning "cabbage salad," according to the "Food Lover's Companion" (Barron's, $16.95), this blend of shredded cabbage, be it red or white and mixed with mayonnaise or a tangy vinaigrette, looks pretty on the plate and makes a pulled-pork sandwich come alive when you add it to the bun.

This dish, which reportedly came to us from the Pennsylvania Dutch (kool meaning cabbage), is basically just cabbage and mayo, but some of the foods coleslaw partners with on that red-checkered tablecloth are very appealing, indeed, especially if you are looking for something to take to a Memorial Day party.
What interferes with this picture, of course, is soggy coleslaw or coleslaw with nasty extraneous ingredients in it such as pineapple chunks or raisins -- or coleslaw with too much mustard in it or pickle relish.
If your coleslaw is successful, it should keep in the refrigerator for up to five days.
